Coconut Lentil Soup



Happy September 1st!
Can you believe it's a new month? Wow! I feel as if this year has just flown by.
I am really looking forward to some Fall weather. Fall is the beginning of cool weather, beautiful leaves, hot cocoa, fires, pumpkin pie, eggnog, cinnamon, cookies, warm blankets - all those wonderful things!

Anyway, today I have a delicious soup recipe to share with you. Perhaps it has already getting cold where some of you are, and soup is just the thing for chilly days. This soup makes a very LARGE pot. If you are not planning on sharing this with all your friends and family, or don't eat large pots of soup by yourself, you may want to make a smaller batch of this. I come from a larger family, so it usually lasts us about two days. However, if you are making this soup for yourself, it would probably last you a week. :)

COCONUT LENTIL SOUP
  • 2 cups of dry lentils
  • 10 - 12 cups of water (or chicken broth)
  • 10 oz. frozen spinach
  • 1 onion
  • 4-5 stalks of celery (chopped)
  • 4-5 carrots (sliced)
  • 6-8 potatoes (diced)
  • 1 packet of coconut milk powder
  • 2 tsps. salt
  • 1/2 tsp. pepper
Get out a large pot and place it on the stove. Throw everything in there as you prepare it. Once all of your ingredients are in the pot, you can turn your stove on and bring it to a boil. Once it has begun boiling, reduce the heat and let it simmer for 25-30 minutes. You will want the carrots and potatoes to be tender, so cook until it suits your fancy. Season to taste. There you have a scrumptious pot of coconut lentil soup. Pour it, let it cool a bit, and then enjoy this amazing dish!
