Kamut Grass

Kamut is a type of grain, which is known for its sweet and nutty flavor. It has been discovered that kamut has a higher nutritional value than wheat! Kamut contains about 40% more protein than wheat is higher in lipids and has 65% more amino acids; it has more vitamins and minerals as well. Kamut is considered a high-energy grain and has a little more fatty acid than wheat. Kamut has 30%more of vitamin E, and has Riboflavin, Thiamin, phosphorus, magnesium, zinc, pantothenic acid, copper, and complex carbohydrates.

Kamut is twice the size of wheat, though it is closely related to it. Studies have shown that kamut is less allergenic. The majority of people who are allergic to wheat have no allergic reactions to kamut. Kamut is cholesterol free! Since kamut has lower moisture content, it naturally protects the grain from insects and spoilage. Kamut has a lower oxidation level, and therefore once the flour is ground there is less nutritional loss between the grinding and processing.

Kamut has a very interesting history.  Stories are told about how a small sample of kamut was found in the pyramids of Egypt.  The grain was planted and it grew.  There was a young Montana airman stationed in the US Air Force in Portugal.  He was given, or perhaps he bought 36 kernels of kamut.  He was told that the grain came from the Egyptian pyramids and he believed it.  He mailed the grain home to his father, who was a wheat farmer.  Out of the 36 kernels his dad planted, 32 of them sprouted.  After 6 years of carefully tending his crop, he had 1,500 bushels.

The farmer took his unusual, large kerneled wheat to the county fair and called it “King Tut’s Wheat.”  The grain never developed much interest and the farmer ended up feeding it to his cattle.
