Tropical Oatmeal

I was uploading some pictures from my camera, and saw this picture of oatmeal that I made for my brother a few weeks ago. I had intended to share the recipe on the blog, so I guess I shall do that today. This oatmeal was really good and different from any other oatmeal I have ever made. I've never had pineapple or cashews in my oatmeal, but they sure were delicious!

If you are in the mood for something refreshing and fruity for breakfast, try this oatmeal. Also, I think that this would be soooo good cold, so make this the night before and enjoy some tropical overnight oatmeal.

Tropical Oatmeal
  • 1/2 c. old fashioned oats
  • 1 c. water
  • 1/2 c. pineapple
  • 1 tbsp. cashews
  • 1 tbsp. shredded coconut
  • 1/4 c. pineapple juice
  • 1 tsp. brown sugar
Fill your pot with water, and let it come to a boil. 

I haven't tried this, but I think you could cook the oats in pineapple juice. I don't know how this would come out, but I think it should work. Just an idea...

While you are waiting for the water, you can get out your pineapple, coconut, and cashews. I used a can of pineapple chunks and the juice from there. The cashews were lightly salted, but any cashews you have should be perfect.

Once the water boils, stir in your oats and let them cook for about 5 minutes. (If you are using a different type of oatmeal, follow the directions on the package.)
When your oatmeal is done cooking, pour it into a bowl and get ready to decorate!
Pour the pineapple juice over your oatmeal, sprinkle the coconut, add the pineapple chunks, and lastly add your sugar. You can add some cinnamon for some extra flavor. :)

Now enjoy your tasty tropical oatmeal bowl!

Cinnamon Coffee Cake

Okay, due to special request, I am sharing this amazing Cinnamon Coffee Cake recipe.
I don't have any pictures yet, so when I make this again I'll be sure to take some. For now, here is the recipe with pictures coming soon. :)

Cinnamon Coffee Cake
  • 1/4c. butter (softened)
  • 3/4c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. milk
  • 1 1/2 c. flour
  • 2 tsp. baking powder (sift)
  • 1/2 tsp. salt

  • 1/2 c. brown sugar
  • 3 tbsp. flour
  • 2 tsp. cinnamon
  • 4 tbsp. butter (melted)
  • 1/2c. chopped nuts (optional)
We start with the wet ingredients. Get out your beaters and a spatula - you'll need both.
In a large mixing bowl, pour in your softened butter, sugar, egg, milk, and vanilla, and cream (beat) together. Next you will add in your flour and baking powder. Mix the wet and dry ingredients together. When thoroughly mixed, pour into 9x9 in. baking pan. Now we will make the topping for this.

In a separate bowl, mix together the brown sugar, flour, and cinnamon. Sprinkle this mixture over your cake. Lastly, drizzle the melted butter over your cake and top with nuts.

Bake for 25 minutes or until thoroughly cooked. The top should feel firm, and when tested with a knife or toothpick, it should come out clean.

Peanut Butter & Jelly Banana Oatmeal

Happy Friday!

Are you excited for this weekend? I know I am. I've always loved Fridays.
For me, Friday night means: Bible studies, family movies, popcorn, cake, cuddling, and talking with my sister late into the night. Yup. I love Friday. :)

And the only thing better than a Friday night is a Saturday morning. ;)
Saturday mornings mean sipping a steaming cup of coffee while reading my Bible and spending time with my Father. Saturday mornings mean talking with my mom, soaking in the tub, or enjoying a special breakfast treat.

Since Saturday morning is only a few hours away, I thought I would share a delicious breakfast that you can whip up in the morning - Peanut Butter & Jelly Banana Oatmeal. 

The inspiration for this amazing breakfast comes from the lovely Taralynn over at the blog Undressed Skeleton. She made PB&J Oats, and they looked so inedible, that I just had to try them. However, I added a banana to my oatmeal because - well... do you really need a reason to add banana? :)

Okay, now I will share my recipe. And let me tell you, this oatmeal was soooo good. Seriously, this is one of the best bowls of oatmeal I have ever had. I have made peanut butter oatmeal many times before, but the jelly with that banana - heaven!

Peanut Butter & Jelly Banana Oatmeal

  • 1/2 c. old fashioned oatmeal
  • 1 1/4 c. water
  • medium banana
  • 1 tbsp. peanut butter
  • 1 tbsp. strawberry fruit spread (or jam)
  • cinnamon

Get out your pot, and fill it with 1 and 1/4c. of water. I add the 1/4 c. because I believe this makes my oatmeal creamier. This is personal preference, so you can just use 1 cup of water if you like. Extra water means waiting extra long. If you don't mind the wait, I recommend adding it.

Once the water begins boiling, lower the heat a bit and pour in 1/2 cup of oats. Stir as needed. (Our stove is kind of crazy and the oatmeal always spills over if we don't lower the heat enough and stir well.) Cook the oatmeal according to directions on package - usually about 5 minutes - or until it reaches desired consistency.

Now pour your oatmeal into your prettiest bowl (cause everything tastes better in a pretty dish.)
This is the fun part - decorate your oatmeal! Slice the banana and arrange the pieces on your oatmeal. Then measure a tablespoon of peanut butter and a tablespoon of jelly and add that to your bowl. Last of all, sprinkle with cinnamon! Bon appetit!

I didn't add any sugar to my oatmeal - I rarely do - because I really don't think this needs it. However, you can add a sprinkle of sugar if you so desire. 

My oatmeal was so delicious and creamy. I never wanted the bowl to end. Mmmmm. So good.
